  • 150ml Coconut milk

  • 110g Rolled oats

  • ½ tsp Cinnamon
  • ½ tsp Baking powder
  • Pinch of salt
  • 150g Peach slices, chopped

Instructions:

  1. Prepare the Wet Ingredients:

    • Measure coconut milk and vanilla extract into a mixing bowl.
    • Add golden syrup and mix well.
  2. Mix the Dry Ingredients:

    • Add rolled oats, sunflower seeds, cinnamon, baking powder, and salt to the wet ingredients.
    • Fold everything together gently until combined.
  3. Add the Peaches:

    • Cut peach slices into small chunks and fold them into the batter.
  4. Prepare to Bake:

    • Divide the batter evenly between mini loaf cases.

  5. Bake:

    • Preheat your oven and bake at 180°C (160°C fan) for 15 minutes, or until golden and set.
